The aim of this course is to equip students with an understanding of fish and seafood applications, and the skills to prepare, cook and present complex fish and seafood dishes using a range of methods and techniques. This course includes NZQA unit standards 13304, 13305 and 13307 and City & Guilds 7065-32 328.
